artichoke hearts wrapped in prosciutto & goat cheese

Ingredients:
1 can of artichoke hearts
4 oz of softened goat cheese
1/4 pd of prosciutto
arugula
balsamic glaze

Drain & rinse artichoke hearts. Cut prosciutto in half, length wise & spread with goat cheese on each slice. Wrap the prosciutto & goat cheese around each artichoke heart. Spray a cooking pan with cooking spray & sauté the artichoke hearts for 2 minutes. Plate on top of arugula & drizzle balsamic glaze on top.
