sundried tomato pesto w/ zoodles


Ingredients:

Zucchini Noodles (3 Zucchinis)
Sundried Tomato Pesto
½ cup Sundried Tomatoes (save two piece to garnish with)
2 cups Basil Leaves
2 Garlic cloves
Juice of ½ Lemon + plus more for storage
¼ cup Olive Oil
1 cup Walnuts
1 teaspoon Sea Salt

Instructions

Zucchini Noodles:
Spirlize zucchini

Place noodles in a large bowl, add the pesto and toss until everything is well coated.

Sundried Tomato Pesto:
In a bowl, cover sun dried tomatoes with just enough water to soak it for 10 minutes till soft.

In a food processor, blend all the ingredients until well combined. Refrigerate with extra lemon juice squeezed on the top.
